A taste of a contemporary luau. Coat pork tenderloin in a Red Diamond Coffee® rub and grill for fall-off-the-fork tenderness. Serve with a fresh Mango Salsa for a dish that makes any mealtime an island adventure.
Ingredients
½ cup freshly ground Red Diamond® European Roast Coffee
½ cup onion powder
½ cup seasoning salt
½ cup lemon pepper
½ cup garlic and herb
1 cup extra virgin olive oil
2 mangos
½ red onion
¼ cup orange juice
¼ cup cilantro
Directions
For the Red Diamond® Coffee Rub mix the first five ingredients in a small bowl
For the Mango Salsa, mix mango, red onion, orange juice, cilantro and 1 teaspoon of the coffee rub in medium bowl. Cover and refrigerate until ready to serve
Brush pork tenderloins with oil. Coat evenly with remaining coffee rub. Refrigerate 30 minutes or longer for extra flavor
Grill pork over medium heat 20 to 30 minutes or until desired doneness, turning occasionally. Let stand 5 minutes before slicing. Serve pork with Mango Salsa
