Cassia Coffee

Steep demerara (a Guyanese brown cane sugar) with cinnamon overnight.   Add it to a tall glass of iced coffee and coconut milk, and garnish with a cinnamon stick for a soothingly smooth spiced icy beverage.


0.5 oz. demerara sugar

0.25 oz. water

4 cinnamon sticks, plus 1 for garnish

4 oz. Red Diamond iced coffee

1.5 oz. of coconut milk


1Mix demerara and water, and place 4 cinnamon sticks in, to steep overnight

2To a tall glass, add 0.5 oz. of the demerara- cinnamon mixture

3Add the iced coffee and mix in the coconut milk

4Garnish with a cinnamon stick
