A decadently sweet blend of chocolate and coffee, this Mocha Mousse brings a unique elegance to your dessert offerings. Serve individually or as a dish to share. It can even be prepared a day in advance.
Ingredients
½ cup sugar
4 oz. Red Diamond® High Altitude Colombian Coffee, brewed
6 oz. semi-sweet chocolate chips
2 large, pasteurized eggs
1.5 cups whipping cream, whipped
Directions
1Put sugar and coffee in a small saucepan and bring just to a boil
2Simmer 3 minutes
3Put chocolate chips into a blender or processor and add coffee/sugar
4Blend for 10 seconds
5Add eggs and blend for 1 minute
6Let cool for 5-10 minutes
7Fold chocolate mixture into whipped cream (Fold gently but completely until the mixture is no longer streaky)
8Pour into one serving dish or individual dishes and refrigerate
9May be made the day before needed
