WHY COFFEE IS KEY.
According to Chef Ina Pinkney of INA’S in Chicago, “coffee must bring a WOW experience to the table or counter to elicit a sensory reaction.” Coffee plays an integral role in your customers’ routines, and skimping on the coffee you serve could play a negative pivotal role in overall customer satisfaction.

A HIGH-MARGIN SELLER AT ANY HOUR.
Just as coffee has evolved, so has breakfast itself. The work-from-home trend has consumers seeking out their daily fix later and later. According to Business Insider, the time for people to buy their coffee is now more common between 10 a.m. and 2 p.m. To attract the growing number of Americans working off-site, offer items/specialty beverages such as cold brew and cappuccino that are more difficult or too time-consuming to make at home.
CREATIVE WAYS TO CAPITALIZE ON COFFEE
Offering top-quality, on-trend coffees such as those that make up the extensive portfolio of Red Diamond® products is only part of your success. How you serve them can make all the difference. Two industry insiders shared with Red Diamond what they feel are great ways to elevate your coffee program to help you Master The Morning and drive profits all day long.
CHEF INA PINKNEY
CHEF/OWNER INA’S, CHICAGO, IL
Chef Ina shares her insights with Red Diamond Trend Alert readers on how to give their coffee program a boost.
- Help make the decisions for your customers. People are busy, so limiting decision making and offering a special (for example: coffee and muffin combo) helps make the sale and even influences add-on sales.
- Having an element of human connection is important. Now more than ever, hospitality and optimism are great ways to set your operation apart. Promotions (for example: a free branded coffee tumbler) help extend a brand experience. Everything about hospitality is engagement, even preprinted materials that say, “We’re so happy to see you.”
Meet consumers’ specific needs and demands. People consume differently today. Things as offering a carafe of coffee (or a large-batch to-go option) helps avoid the conflicts associated with refilling. Customization is also key and offering specific pairings inspires purchase. Iced coffee is now an all-day favorite. Getting back to basics with comfort foods (and comforting coffee) is a big draw as well.
- Prepare for today’s to-go world. Bag extras as you would see in a hotel by including sugars, creams and any additional ingredients. Make sure everything is packed thoughtfully in spill-proof containers.
CHEF ANDREW SPIELBERG
CHEF/CO-OWNER, GRACIE’S LUNCHEONETTE,
HUDSON, NY
The team at Red Diamond recently spoke with Chef Andrew about his suggestions on how operators can perk up their mornings/morning traffic. Here are some of his insights.
People like having variety and uniqueness. Create innovative and seasonally inspired drinks to keep your menu new and exciting. Use ingredients that reflect the season – pay attention to colors and garnishes. Spice up the menu with different flavors and profiles, such as cardamom, coconut and chile. Also offer various alternative milk, options such as coconut, oat, almond, etc. Creative beverages also look great on Instagram.

- It’s the little things that matter most. Something as simple as offering special prices or loyalty rewards that are targeted at certain hours can help ensure repeat customers. Also, highlighting the freshness of your coffee creates more appeal. Creating bundles and BOGOs or implementing happy hours are also great ways to satisfy your customers.
